Abstractg-polylysine is a natural food preservative,but its bacteriostatic effect isrelatively poor compared with that of synthetic chemical preservatives.In this paper,the interaction between s-polylysine and the biopolymer with different charge wasanalyzed by ultraviolet spectrophotometry,and the effects of different chargebiopolymers on the bacteriostatic activity of s-polylysine were analyzed by drillingmethod,microdilution method and CTC method.Uv-vis spectra show thats-polylysine interacts with negatively charged polymers.The bacteriostatic activity of8-polylysine was enhanced by positive streptococcus lactis and protamine sulfate.Thee negatively charged pectin,carrageenan and sodium carboxymethyl cellulose (CMCNA)have a certain inhibitory effect on its antibacterial activity,while the unchargedglucan has less effect.This study can provide a reference for g-polylysine in foodpreservation.Key words:s-PL;biopolymers;Antibacterial activity of:E.coli;Bacillus subtilis2
