北京理工大学珠海学院2020届本科生毕业论文Study on the technology of a sugar-free spirulina nutrition tabletAbstractSugar Spirulina Nutrition Tablets is a chewable tablet rich in spirulina protein.Sugaralcohol is used instead of traditional glucose and sucrose as sweeteners,and inulin is used as afiller.In this project,the sensory evaluation was used as an indicator to optimize the additionof spirulina protein powder,erythritol,and inulin,and the granule production rate of thegranulation process in the production process was the process test standard and combinedwith economic Cost,the granulation production process of sugar-free spirulina nutritiontablets was optimized.The best technological formula:Spirulina protein powder,erythritol,and inulin are best added in 16%,55%,and 6%,respectively.The best granulation productionconditions are:60%edible alcohol concentration,temperature is 60 degrees.A single factortest was carried out on the pressure during the tableting process,and the best tabletingpressure was 55 kN.According to the national standard,the protein content of the sugar-free spirulinanutrition tablets produced by Kjeldahl method was 14.56%,the fat content was 0.36%bySoxhlet extraction method,and the sodium content was measured by flame atomic absorptionspectrophotometer.125mg /g.Through the stability inspection,the sugar-free spirulinanutrition tablets are less affected by humidity and more affected by temperature.Keywords:spirulina;erythritol;technological research
