北京理工大学珠海学院2020届本科生毕业设计Annual production of 3,0000 tons of blueberry anthocyanin gelcandy designAbstractThe traditional way to make blueberry gel candy is to add anthocyanins on the basis oftraditional gel candy production process.The so-called anthocyanidin is a natural pigmentwith antioxidant and anticancer effects in blueberries.The key point of the product design isto extract anthocyanin on the basis of industrialization by enzymatic hydrolysis,which cannot only protect the activity of the extract,but also make the extract free from chemicalreagent residues and pollution,and has the advantages of low cost.In addition,for thecompounding of food gum,three kinds of food gum,namely carrageenan,gelatin and agar,are in the ratio of three to two to one Examples are precisely formulated to achieve thepurpose of improving the quality of product gels.The following is the production process ofthe product:first,extraction,then enzyme hydrolysis +sol,after pouring,molding,then afterthe formation of the sterilization and drying,after cooling finished,the final packaging,through the entire production process,and collocation with scientific workshop layout design,can achieve the goal of producing 30000 tons of blueberry gel candy annually.Keywords:blueberry gel candy;enzymatic hydrolysis;food gel compounding;materialbalance;factory design
