AbstractIn China,fermented food has a long history.At the beginning,fermented foodwas only used as a way to preserve food and extend the shelf life of food.Withthe spread of culture and the evolution of fermentation technology,fermentedfood has become a special means of food processing.Northwest region has aspecial climate and geographical conditions.It is suitable for the productionand preservation of fermented food and has a variety of fermented food typesand common consumption habits.Based on the perspective of consumers andlocal consumers and sellers,this paper mainly investigates the factors thatrestrict the development of characteristic fermented food in Northwest region,and puts forward the corresponding solutions and future prospects.It providessome references for the production and future development of specialfermented food in northwest region.Key words:Fermented food;Northwest characteristics;investigation and research;constraints;consumer;sellers
