北京理工大学珠海学院2020届本科生毕业设计Annual production process design of 5000 tons of breadAbstractThrough consulting a lot of data,this design analyzes the research status of bread athome and abroad and the application prospect of new bread.The formula was optimized,andpeanut,walnut and rose materials with beauty effects were added on the basis of traditionalbread formula,the amount of added accounts for 12%,10%and 2%of the flour amountrespectively.And added 5%of the flour amount sweetener xylitol in stead of the whitegranulated sugar,which greatly improve the functionality and nutrition of bread.At the sametime,the compound of sodium dehydroacetate and calcium propionate was added to preventbread from corrosion,in order to improve the shelf life of bread.In addition,determine theproduction process,through the material balance to determine the equipment selection,energybalance,the layout of the workshop,the direction of logistics for a reasonable design,the finalcost estimate,determine the product price,so that the factory to obtain considerable profits.Keyword:Bread;Beauty to raise colour;Formula optimization;factory design
