北京理工大学珠海学院2020届本科生毕业设计Annual output of 5000 tons of chocolate factory designAbstractThe low-calorie functional chocolate of this design is based on the traditionalchocolate production process,based on cocoa butter and cocoa mass,add 6%-12%xylitol,8-12%erythritol,5-8%inulin,new sweetener combination to replacetraditional sucrose,and add diglyceride,through multiple processes such as refining,refining,and molding to produce new low-calorie functional chocolate.Theinnovation of this design is the use of a new combination of sweeteners anddiglycerides,not only can reduce the calorie of chocolate,but also has many functionsof health protection such as protecting the stomach,make this chocolate product morefunctional and nutritious.Through material balance,design the layout of theworkshop,and carry out the process according to the equipment selection,carry outcost estimation,and then conduct three waste treatments to save energy and reduceemissions and reduce pollution,so as to achieve the goal of producing 5,000 tons ofchocolate per year.Key words:Functional;Chocolate;Sweetener combination;Workshop layout
