AbstractIn order to explore the influence of different freezing storage temperatures on the qualityof Phascoloma esculenta,the experiment took the basic nutrients,the texture and the sensoryevaluation as the quality evaluation indexes of Phascoloma esculenta,and investigated thequality changes of Phascoloma esculenta at-18C,-33C,-80C frozen storage temperatures.The results showed that the water content,collagen content,salt-soluble protein content,texture and sensory evaluation of starfish all showed a downtrend with the extension offreezing storage time,while the water-soluble protein content showed a rising trend,whichgenerally showed a downtrend of quality.The quality of Phascoloma esculenta under -18Cfrozen storage is the most obvious decline.Key words:Phascoloma esculenta;low temperature storage;essential nutrients;texture;sensory evaluation;
