北京理工大学珠海学院2020届本科生毕业设计Annual output of 10000 tons of fruit wine Production process designAbstractThe fruit wine in this design is a low calorie health-care alcoholic drink made fromnutritious mountain grape through fermentation,aging and other processes.Compared withthe traditional fruit wine production,the key of this design is to use Stevia instead of sucrosein the formula,reduce the heat of fruit wine and enhance the health care.Freezing technology,0.09%Chitosan and 0.08%pectinase were used to reduce acid and clarify,improve the tasteand retain the nutrition of fruit.Through the determination of the product plan,the equipment with high degree ofautomation and advanced technology shall be selected,the production shall be arrangedreasonably in combination with the layout of the production workshop and the technologicalprocess,and the material balance and cost estimation shall be carried out to achieve the goalof annual output of 10000 tons,energy conservation and consumption reduction,and greenproduction.Key words:Fruit Wine;Low Calorie;mountain wine;process design;Stevia
