Advances in Studies on the Biological Activities of Lutein andZeaxanthin and Their Applications in foodAbstractBoth lutein and zeaxanthin belong to one of the carotenoids.They are widely found in nature.Both lutein and zeaxanthin are abundant in vegetable,fruit,flower as well as in other plant tissues.These elements cannot be constituted in the human body,which requests to be gained throughdaily absorption.Lutein and zeaxanthin have unique efficacy,diverse biological activities,andwide application,which is one of the hot research topics at home and abroad.In this paper,research methods of lutein and zeaxanthin are investigated throughinvestigation,theoretical research,literature review,etc.in other to fully understand the sources,biological activities,and their use in food of lutein and zeaxanthin.Application of scientificresearch value.Most of scientific studies at home and abroad have illustrated that lutein has aprotective effect on vision.It can prevent and treat eye diseases such as cataracts,age-relatedmacular degeneration,and can also postpone cardiovascular diseases such as early atherosclerosis,and has certain preventive and therapeutic effects on cancer.Zeaxanthin also has antioxidanteffects,which can prevent and treat eye cataract,senile macular degeneration,cardiovascular andcerebrovascular diseases,etc.Both can be used as colorants,nutritional dietary supplements andother food additives in the food production and processing process.With in-depth developmentand research,lutein and zeaxanthin will definitely become an important food additive with broadprospects in China.They will play a significant role in the food industry at home and abroad.Key words:Lutein;Zeaxanthin;Bioactivity;Application
