北京理工大学珠海学院2020届本科生毕业设计Production process design of 10 P black breweryin a 120,000 tons annual outputAbstractBlack beer,also called thick beer,is usually brown or dark brown in liquor.Comparedwith light beer,burnt malt and black malt are added as raw materials.The concentration ofthe original wort is 10-20 degrees,and the alcohol content is more than 3.5%.The liquorhighlights the malt flavor and the malt coke flavor.The taste is mellow,slightly sweet,andthe bitter taste of hops is not obvious.The purpose of this design is to preliminarily determine the technological process andconditions of the black brewery with an annual output of 120000 tons and 10 P,determinethe processes of brewing,saccharification and fermentation,and carry out material balanceand heat balance in the workshop.Preliminarily formulate the model and quantity ofworkshop production equipment,and arrange the factory in accordance with the nationalregulations.Key word:Black bear;Saccharification;Fermentation;Fermentation tank;Material balance
