ABSTRACTEyebrow tea Mr.Jin is a branch of Chinese lapsang souchongblack tea,breed is rare,are found in wuyishan city in fujianprovince.Slender shape,such as eyebrow eyebrow tea,Mr.Jin roundheavy compaction,the surface of cloth has a small golden hairs,appearing after water amber color eyebrow,Mr.Jin honey tea with lightfragrant,the entrance is sweet.This thesis mainly research content as follows:first of all,based on theHS SPME extraction eyebrow tea aroma components,Mr.Jin analysis ofthe composition of the eyebrow tea aroma components,the Mr.JinAroma components extracted with a variety of ways,and someresearch under different conditions on the influence of extractingeyebrow aroma components;Mr.JinSecondly comparing a variety oftypical characteristics of tea aroma components and aroma componentsof research;By GC and GC-MS analysis O,isolated from a variety ofeyebrow characteristics of flavor substances,Mr.Jin by aroma omissionsrestructuring experiments,further verify the contribution of aromasubstances sex,it is concluded that the eyebrow tea aroma is one of themost contribution to Mr.Jin sexual material;And sensory evaluation wascarried out on the eyebrow tea Mr.Jin,including flowers,fruit,radixaucklandiae,grass and acid sweet,draw eyebrow to Mr.Jin sensoryproperties is significant difference of the highest of flowers,followed byfruit,finally,the grass is sweet,sweet and sour sweet;By applyingeyebrow Mr.Jin tea in the tea beverage extract and adding thecompound feeding,through the study of the sensory evaluation of teadrinks experiment,feeding spiced research qiao of tea beverage has thecertain innovation and guiding significance.KEY WORDS:jin junmei tea,Characteristic aroma,Aroma omission andrecombination,Tea and beverage2
