北京理工大学珠海学院2020届本科生毕业设计Design of a factory with an annual output of 500 tons of high-fiberdigestive biscuitsAbstractHigh-fiber digestive biscuits are based on the traditional biscuits process,addinghigh-quality dietary fiber that improves intestinal function and helps digestion.It is processedthrough ingredients,stirring and mixing,dough standing,compression molding,baking,cooling and other processes.It is a functional food with the characteristics of high fiber,lowcalorie and digestion.In the production of biscuits,it is necessary to explore and determine the optimal ratio ofraw material ingredients and the best conditions for baking.The key point of this design isthat the selected raw material is okara,and the okara is modified by ultra-fine crushing.Thereby improving the taste and characteristics of cookies.Okara is rich in dietary fiber andhas physiological characteristics such as maintaining steady state of the humangastrointestinal tract and promoting peristalsis.At present,the utilization rate of okara is lowin China.This design has achieved the goal of producing 500 tons of okara high-fiberdigestive biscuits through reasonable process flow and workshop layout design,therebyimproving the utilization rate of okara.According to the optimized production process andtarget output,material balance,equipment selection and cost estimation are carried out tomaximize energy saving,reduce consumption and reduce pollution.Keywords:Okara;dietary fiber;ultrafine crushing;factory design1
