of the Brew HouseWang Hua Li(College of food Science,South China Agricultural University Guangzhou 510642,China)Abstract:It is stringently urgent to deal with the difficulty of shortage of water resource inthe economic construction in China.However it can never be ignored that the loss andwaste have intensified the shortage of water resources.Beer industry is a big waterconsumer,even more;it is a big producer of wastewater.In China,the water consumptionof processing one ton of beer is from 10 to 30 ton.And the discharge of wastewater ofprocessing one ton of beer is from 10 to 20 ton.Comparing to the international averagelevel,there is a great potential of saving water and reducing emitting pollutants in beerindustry.The paper studies the optimization of utilizing water resource in a brewhouse,which has been proved to achieve fairly good economic profits and provided someexperiences for saving water and reducing emitting pollutants in other brewhouses in thisfield.Firstly,the paper presents a survey on manipulation with water in the productionfacilities of the brewhouse,and then draws a plot of the water network of the maintechnical raw,which provides some basic data for the analysis of water usage.Secondly,it chooses some of the main operations in the beer manufacture to composethe simple water network,and describes how the amount of minimum fresh water can beobtained by using a density interval diagram and a density complex curve.It fringe applythe water pinch technology in the beer operation with water.And the amount of minimumfresh water can be obtained which passes the water pinch.It needs the fresh water dosageof 168.39 ton every hour,and saving water rate is 5.46%in Project One;the fresh waterdosage of 158.92 ton every hour,and saving water rate is 10.78%in Project Two;the freshwater dosage of 149.45 ton every hour,and saving water rate is 16.10%in Project Three.Itshows that the higher of the limiting density permitted by the operation of waterconsumption,the lower of recycling water is required,which means more water can beused again,therefore,better economic profits of saving water can be achieved.Thirdly,it applies the water pinch with the two methods of the water recycling and therecycling regeneration in the simple water network by the operation and two otheroperations which reclaim and utilize the second steamy in procession of seethe of the beerproduction.It needs the fresh water dosage of 123.42 ton every hour,and saving water rateis 8.11%in the method of the water recycling;64.96 ton every hour,and saving water rate
