Effects of different drying methods on functional properties ofsoluble dietary fiber in Tartary buckwheat huskAbstract:In this experiment with buckwheat bran as raw material,adopts the puffing methodmodification,soluble dietary fiber prepared by enzyme solution method,two drying methodsare optimized by the orthogonal test method the extraction process of preparation of solubledietary fiber,and the two different drying methods of preparation of soluble dietary fiberanalysis of its physical and chemical indices and functional characteristics,Including:holdingwater power,holding oil power,swelling power,solubility,cholesterol adsorption capacity,heavy metal adsorption capacity,glucose adsorption capacity.The results showed that theoptimal extraction conditions were 5.5%of the sample amount,53'C,5.5h and 1:20 of thesolid-liquid ratio,regardless of the hot air drying or vacuum freeze drying.The functionalproperties of soluble dietary fiber obtained by vacuum freeze-drying are better than thoseobtained by traditional hot air drying.In conclusion,vacuum freeze drying can be used as abetter extraction method for the extraction of soluble dietary fiber in processed foodsKeywords:Tartary buckwheat skin lifting;soluble dietary fiber;vacuum freeze drying;hot airdrying;functional characteristics
