北京理工大学珠海学院AbstractAlcohol is widely used in national defense,food,biology,chemical industry andmedicine,etc.Stimulated by the increasing depletion of mineral energy and the globalclimate crisis,alcohol as a green and renewable clean energy the demand for alcoholis increasing,which provides a good opportunity for the development of alcoholtechnology.In this design,cassava as raw material,uses biological fermentationmethod,and advanced technology which suitable for actual production conditions toproduct alcohol.Alcohol fermentation has existed since more than 2000 years ago,but throughthe unremitting efforts of generations of researchers,it continues to create a newchapter in the alcohol industry and inject new vitality into the old wine making field.Now the alcohol fermentation industry has made remarkable progress in all aspects,such as production technology,equipment,product quality,comprehensive utilizationand automatic control technology,etc.,these changes have coruscated the strongvitality of the alcohol industry.Keywords:green and renewable clean energy,biological fermentationmethod ,advanced production process,
